This is my last week being 29 years old! Yes, I turn 30 on Saturday! This turning point is quite frustrating for people but for some reason, personally I’m not frustrated at all! It took me 30 years to get so far and I will celebrate it! I intend to have a wonderful party for close friends (for sure you will see it on instagram – since I’m Instaddicted) but until then, during the week I will be posting sweets for birthday parties!

I begin with the Marble Cupcakes and Fluffy Peanut Butter Frosting Recipe



Ingredients

Ingredients for the cupcakes
    ,
  • 225g butter, softened
  • ,
  • 225g caster sugar
  • ,
  • 4 eggs
  • ,
  • 225g self-raising flour
  • ,
  • 3 tbsp milk
  • ,
  • 1 tsp vanilla extract
  • ,
  • 2 tbsp cocoa powder
Ingredients for the Fluffy Peanut Butter Frosting
    ,
  • 180 g. cream fresh with 35% -36% fat
  • ,
  • 2 tbs powdered sugar
  • ,
  • 150 g. peanut butter

Instructions

Directions for the cupcakes
    ,
  • Heat oven to 180C.
  • ,
  • Grease a cupcake tin and dust with flour.
  • ,
  • If you want to make life easy, simply put all the ingredients (except the cocoa powder) into a food processor and whizz for 1-2 mins until smooth.

  • If you prefer to mix by hand, beat the butter and sugar together, then add the eggs, one at a time, mixing well after each addition.
  • ,
  • Fold through the flour, milk and vanilla extract until the mixture is smooth.
  • ,
  • Divide the mixture between 2 bowls.
  • ,
  • Stir the cocoa powder into the mixture in one of the bowls.
  • ,
  • Take 2 spoons and use them to dollop the chocolate and vanilla cake mixes into the cupcake pan alternately.
  • ,
  • When all the mixture has been used up tap the bottom on your work surface to ensure that there aren’t any air bubbles.

  • Take a skewer and swirl it around the mixture in the tin a few times to create a marbled effect.
  • ,
  • Bake the cake for 25-35 mins until a skewer inserted into the centre comes out clean

  • . Turn out onto a cooling rack and leave to cool.

  • Will keep for 3 days in an airtight container or freeze for up to 3 months.
Directions for the Fluffy Peanut Butter Frosting
    ,
  • Beat the cream fresh and the icing sugar in the mixer with a whisk until the cream becomes thick
  • ,
  • Stop the mixer, add the peanut butter and stir gently with a spoon.
  • ,
  • Garnish the cupcakes using piping bag.
