Ingredients

400 g flour for all uses
100 g yellow wheat flour
9 g  yeast powder
220 ml lukewarm milk
1 tblsp olive oil
1 tsp salt
1 1/2 tsp sugar

Directions

Put all the ingredients in a bowl except for the milk and oil and mix well. Open a dent in the center and add oil and milk. Use a fork to mix the liquids with solids until you get a dough that does not stick to the walls of the bowl.

Take it  to a floured counter and knead until it forms a soft and elastic dough.

Put the dough back in the bowl, cover with a clean towel and allow 30 minutes  to rise.

 For the caramelised onion

Ingredients

400 gr. onion, thinly sliced
40 gr. olive oil
5 gr. sugar
35 gr. balsamic vinegar
salt

Directions

Heat a nonstick skillet over medium to high heat. Add the olive oil and saute the onion. Keep stirring well for a few minutes. Season with salt and continue to saute the onion until it gets a nice golden color, and then add sugar. Sprinkle well to make sure that it goes everywhere. Let it caramelize, add the vinegar and reduce heat. The best way to add the balsamic vinegar is to spray it over the pan. If you shoot straight from the bottle it will flood and will not be absorbed properly. Cook until the vinegar is completely absorbed. Add a little water,  if necessary.

Use a spoon to transfer  the caramelized onion on top of the pie, add a small piece of blue cheese and bake in preheated oven at 180 °C for 30 minutes or until the dough is golden brown.
