Vegan chocolate peanut butter bars (5 ingredients only)

Vegan pâtisserie is full of treasures! Even by using a few (and cheap) ingredients, you can get real wonders of taste that -compared to those of traditional pâtisserie- are not short of anything.

Today I am cooking chocolate bars -ideal to eat when you got the munchies after lunch, during the afternoon or late at night- by using 5 simple and cheap ingredients! Their base consists of smooth dough made of dates and crunchy nuts, while there is peanut butter in their middle layer!

Tip 1: If the nuts you have in your cupboard have turned soft, you can refresh them by baking them in the oven for 10 minutes at 180°C.

Tip 2: The best dates for this recipe are the royal dates that you can find in dried fruits and nuts stores. Dates, in general, easily turn dry if they are stored for long periods. To make them regain their lost moisture, you can dunk them inside hot water for 10 minutes and then properly drain them.

  • 500 g dates, without seeds
  • ,
  • 200 g hazelnuts
  • ,
  • 1-2 teaspoons of cocoa powder
  • ,
  • 100 g peanut butter
  • ,
  • 250 g baking chocolate (melted)

Instructions

  • Begin by putting the nuts inside the blender. Blend for 1 minute, until ground.

  • Then, add the dates and the cocoa powder.
  • ,
  • Blend for 3-4 minutes, until there has been shaped a proper, soft “dough”.
  • ,
  • Shape the “dough” using a mould of your choice.
  • ,
  • Spread the peanut butter on top of it.
  • ,
  • Transfer the mould to the fridge for 30 minutes to set and then coat its top with the melted chocolate.

  • Pop the mould back into the fridge for 1 hour and then slice into bars and serve.
