Υou may find lemon curd very easily at the groceries store! But it is quite expensive and the flavor is “artificial”. This recipe is very easy and fast, it will save your budget but will also give you the real taste of lemon curd.

Ingredients for 500 ml:

    ,

  • 2 large eggs eggs at room temperature
  • ,

  • 3 medium, juicy, unwaxed lemons (you need the zest and 200 ml juice)
  • ,

  • 1  1/3 cups sugar
  • ,

  • 125 grams. butter, cut into cubes, at room temperature
  • ,

  • 1/2 teaspoon cornflour

    For storage:
2 sterilized jars of 250 ml
2 pieces of greaseproof paper that we cut to the dimensions of the lids

  • Wash the lemons with water and vinegar and wipe them well.
  • ,

  • Scrape them to get the zest.
  • ,

  • Cut them in half and squeeze to get the juice. We will use both the zest and the juice.
  • ,

  • Use a small saucepan with a thick base. Place the eggs in the saucepan and beat them with a whisk to dissolve.
  • ,

  • Add the zest, juice, sugar, butter and cornflour.
  • ,

  • Stir with whisk all ingredients and place the pot over medium heat.
  • ,

  • This cream requires continuous stirring with a whisk.
  • ,

  • Continue stirring for about 10 minutes, until the cream starts to thicken.
  • ,

  • Then lower the heat and let simmer for just one minute, stirring all the time.
  • ,

  • Remove from the heat.
  • ,

  • Fill hot jars with hot cream to top.
  • ,

  • Cover with wax paper and cover with lids.
  • ,

  • Leave them on the counter for a few hours to come to room temperature.
  • ,

  • Store them in the refrigerator for up to 1 ½ months.

Tip: With these proportions the result is quite sour, such as the traditional flavor of lemon curd. If you want to make it more sweet you can fix the flavor by adding a little icing sugar.
