For the cookie dough

- 250 g. coconut, grated
- 200 g. caster sugar
- 120 g. egg white (about 4 eggs)
- 100 g. cream with 35% -36% fat
- 20g. cornflour
- 100 g. chocolate with about 50% -55% cocoa, chopped

For the chocolate filling

- 250 g. chocolate with about 50% -55% cocoa, chopped
- 250 g. cream with 35% -36% fat

Directions

- Melt the chocolate in bain marie.
- In a large bowl mix all ingredients together and add the melted chocolate.
- Spread the mixture on a baking sheet and make it about 1 cm thick.
- Bake in a preheated oven at 170ºC for 15 minutes.
- Take it off the oven, let it stay for a while to cool down and then cut into two pieces.

For the filling

- Heat the cream and just before it reaches the boiling point pour it over the chopped chocolate.
- Mix well to make a smooth and homogeneous mixture and leave in the fridge to stabilize so that you can spread it over the cookie.
- Spread the mixture on a cookie, cover with another cookie and put the cake in the refrigerator to cool.
- Cut into rectangular pieces.
