- Beat the eggs with the sugar in the mixer on high speed, until they turn white and fluffy.
- Gradually add the almond powder, baking powder and keep on stirring with a spatula.
- Add melted butter and then the candied fruit, zest and rum (or brandy).
- Pour the mixture into well buttered individual ramekins.
- Preheat oven to 170 ° C and bake for 30 minutes.
- Then lower the temperature to 160 ° C and bake for another 30 minutes.
- Allow to cold, remove from ramekins and decorate with icing.
