Pear and Roquefort Cheese Tart

The combination of pear and roquefort cheese is timeless but until now I had never tried it on a tart!

I used to mix these two flavors in a green salad! That was until now. This time I did the basic recipe for savory tart dough (you can see it by clicking here) and decided to cover it with a pear “flower” and blue cheese.

  • 1 onion
  • ,
  • 1/2 clove garlic
  • ,
  • 150 g gruyere
  • ,
  • 1 tablespoon balsamic vinegar
  • ,
  • 1 tablespoon butter
  • ,
  • 1 tablespoon olive oil
  • ,
  • 1 pear
  • ,
  • 150 g roquefort cheese

Instructions

    ,
  • Prepare the dough and bake it blind according to the instructions you will find in this link
  • ,
  • In a pan melt butter with olive oil
  • ,
  • Saute the onion with the garlic in the pan
  • ,
  • Once the onion is transparent add the balsamic vinegar and let it evaporate
  • ,
  • Add the gruyere and mix well
  • ,
  • Spread the stuffing of onions and gruyere on the pre-baked dough
  • ,
  • Arrange the pear slices on top
  • ,
  • Spread the roquefort cheese over the pear
  • ,
  • Bake for 40 minutes at 180 °C until the pear gets soft.
