The combination of pear and roquefort cheese is timeless but until now I had never tried it on a tart!
I used to mix these two flavors in a green salad! That was until now. This time I did the basic recipe for savory tart dough (you can see it by clicking here) and decided to cover it with a pear “flower” and blue cheese.

- 1 onion ,
- 1/2 clove garlic ,
- 150 g gruyere ,
- 1 tablespoon balsamic vinegar ,
- 1 tablespoon butter ,
- 1 tablespoon olive oil ,
- 1 pear ,
- 150 g roquefort cheese
Instructions

- Prepare the dough and bake it blind according to the instructions you will find in this link ,
- In a pan melt butter with olive oil ,
- Saute the onion with the garlic in the pan ,
- Once the onion is transparent add the balsamic vinegar and let it evaporate ,
- Add the gruyere and mix well ,
- Spread the stuffing of onions and gruyere on the pre-baked dough ,
- Arrange the pear slices on top ,
- Spread the roquefort cheese over the pear ,
- Bake for 40 minutes at 180 °C until the pear gets soft.
