Basil is my all time favorite flavor! It makes every dish so vivid!
Ingredients
250 gr. flour
2 tsp baking powder
4 eggs
1 yoghurt
1/5 cup olive oil
350 gr. leek
2 fresh green onions
1 bunch chopped basil
400 gr. slice feta cheese
freshly grounded pepper pinch & salt
Directions
Cook leek for 20 minutes in a non stick pan. Mix flour, baking powder, olive oil , eggs and yogurt in one big bowl. Add all remaining ingredients and keep feta cheese the last one so it doesn’t “disappear” in the mix. Put the mixture in a special muffins pan, that is covered with butter and flour. Bake for 30 to 40 minutes in preheated oven at 175°C.
