This is one of my most favorite recipes for the summer! It’s super quick and easy and it only takes a few minutes to assembly.
8 slices of brioche
For the syrup:
100 gr. sugar
100 gr. water
30 gr. liqueur of your preference
For the chocolate cream:
450 gr. cream fresh 35 % fat , whipped in a mixer so it looks like yogurt
225 gr. chocolate 50 % -55 % cocoa , cut into chunks
Syrup: Heat the water and sugar in a pot. Two minutes after it reached the boiling point remove from heat and set aside to cool. If you want, you may add 30 gr. liqueur of choice.
Chocolate Cream: Melt chocolate in a double boiler. Transfer it to another clean pan, add the cream and stir gently with a spoon or silicone spatula.
Use a 20 cm diameter and 5 cm hoop to assembly the cake. First make a base of brioche slices and sprinkle with syrup. Spread evenly half of the chocolate cream use a silicone spatula to make it even. Continue with the remaining slices of brioche, sprinkle with the syrup and finish with the remaining cream. Put the cake in the refrigerator for 5 h.
Tip: You may decorate with almond or sprinkled with cocoa.
