- 3 grated zucchini
- 250 g. margarine or butter
- 50 g. sugar
- 150 g yoghurt
- 2 eggs, beaten
- 1 cup self raising flour
- 150 g crumbled feta cheese
- 150 g grated parmesan
- salt (according to taste)
- Pepper
- 1-2 table spoon mint, fresh oregano

- Preheat oven to 180°C.
- Grease the muffin pan and dust some flour over it
- Grate the zucchini and squeeze all the juice out of it. Add salt
- Beat margarine or butter with sugar at medium speed until fluffy and then add the yogurt and eggs gradually untill you have a fluffy and homogenous mixture.
- Mix the flour with the salt, mint and oregano and pour over the egg mixture, stirring with a spatula.
- Then add the grated parmesan. zucchini, freshly ground pepper and finally the crumbled feta cheese.
- Stir until the mixture is smooth.
- Transfer the mixture into the greased pan.
- Pour the thick batter in the cake pan and bake at 180°C until golden brown. It takes about 50 minutes depending on the oven.
