  • 3 grated zucchini

  • 250 g. margarine or butter

  • 50 g. sugar

  • 150 g yoghurt
  • ,

  • 2 eggs, beaten

  • 1 cup self raising flour
  • ,

  • 150 g crumbled feta cheese
  • ,

  • 150 g grated parmesan
  • ,

  • salt (according to taste)
  • ,

  • Pepper
  • ,

  • 1-2 table spoon mint, fresh oregano

  • Preheat oven to 180°C.
  • ,

  • Grease the muffin pan and dust some flour over it
  • ,

  • Grate the zucchini and squeeze all the juice out of it. Add salt
  • ,

  • Beat margarine or butter with sugar at medium speed until fluffy and then add the yogurt and eggs gradually untill you have a fluffy and homogenous mixture.
  • ,

  • Mix the flour with the salt, mint and oregano and pour over the egg mixture, stirring with a spatula.
  • ,

  • Then add the grated parmesan. zucchini, freshly ground pepper and finally the crumbled feta cheese.
  • ,

  • Stir until the mixture is smooth.
  • ,

  • Transfer the mixture into the greased pan.
  • ,

  • Pour the thick batter in the cake pan and bake at 180°C until golden brown. It takes about 50 minutes depending on the oven.
