- 1 cup quinoa
- 2 cups water
- 1 cup peppers cubed (red and green)
- 1/2 avocado cut in slices
- 1/4 cup fresh oregano
- 2 tablespoons diced onion
- 2 tablespoons lemon juice
- sea salt to taste

- In a small saucepan, combine the quinoa and water.
- Bring to a boil, then cover and turn down to simmer until all the water has been absorbed. It usually takes about 10 minutes.
- Let the quinoa cool before making this salad.
- Add all the ingredients to a bowl (except from the avocado) and toss well.
- Serve with 1/2 avocado cut in slices on top.
- Add balsamic vinegar if you want.
