Vegan Quinoa Salad with Avocado and Peppers Recipe

  • 1 cup quinoa
  • ,

  • 2 cups water
  • ,

  • 1 cup peppers cubed (red and green)
  • ,

  • 1/2 avocado cut in slices
  • ,

  • 1/4 cup fresh oregano
  • ,

  • 2 tablespoons diced onion
  • ,

  • 2 tablespoons lemon juice
  • ,

  • sea salt to taste
  • ,

  • Black peppers
  • ,

  • Βalsamic vinegar (optional)

Directions

    ,

  • In a small saucepan, combine the quinoa and water.
  • ,

  • Bring to a boil, then cover and turn down to simmer until all the water has been absorbed. It usually takes about 10 minutes.
  • ,

  • Let the quinoa cool before making this salad.
  • ,

  • Add all the ingredients to a bowl (except from the avocado) and toss well.
  • ,

  • Serve with 1/2 avocado cut in slices on top.
  • ,

  • Add balsamic vinegar if you want.
