Ingredients

4 slices of bread
2 tablespoons olive oil
1 clove of garlic
Salt and pepper
4 cheddar slices
1/2 onion (in slices)
4 cherry tomatoes
1 sausage
basil leaves

Directions

A bruschetta is, as Jamie Oliver says,  a kind of open sandwich and it’s probably where the idea for cheese on toast originally came from. You made it using a large loaf of bread, my favorite is ciabatta. The bread is best sliced 1cm thick and toasted on a barbecue, but it can also be done in a griddle pan for ease at home.

After that it should be lightly rubbed a couple of times with a cut clove of garlic, then drizzled with some good extra virgin olive oil and sprinkled with salt and pepper. While toasting your bread you will toast the sausage (cut in slices), the onion and the cherry tomatoes. You may add any other vegetables you like. The only rule is that whatever goes on top of a bruschetta should be nice and fresh and cooked with care.

To make the bruschettas add the cheddar cheese on top and let the onion, the cherry tomatoes and the sausage. Sprinkle with fresh basil leaves.
