- 1 tablespoon fresh herbs, oregano, mint, basil or other ,
- 250 gr feta cheese ,
- 250 gr unsalted cheese or cream cheese ,
- a little olive oil ,
- a little vinegar ,

- Wash and peel the beetroots. ,
- Put them on foil, pour them with some olive oil, add salt and close them tightly. ,
- Bake them in a well preheated oven at 180 ° C for 30 minutes. ,
- Remove and cut into small cubes. ,
- In a large frying pan, sauté onion with spring onions and leek (and garlic optional). ,
- Add the beets, herbs, sausage and mix. ,
- Crumble the cheeses and add them to the pan. ,
- Remove from the heat. ,
- Grease well the baking pan. ,
- Put the first sheet and grease well with a brush. ,
- Add the second one and grease it. ,
- Put 1/4 of the filling and continue with the next sheet. Grease well and repeat the same procedure for another 3 times. ,
- Finally, cover with two more very well greased sheets. ,
- Optionally sprinkle a tablespoon of sesame seeds on the surface. ,
- Bake in a well preheated oven at 180 ° C for 40 minutes.
