3 ingredients only –butter, refined sugar and flour– are enough to knead these simple cookies and to make your house smell butter. Their taste will be upgraded with the use of 1 more ingredient: your favourite marmalade, hazelnut praline or any other spread you have at your kitchen, while the use of Christmas cookie-cutters will give them an Instagram-friendly appeal!

Ingredients

    ,
  • 230 g butter, at room temperature
  • ,
  • 65 g white refined sugar
  • ,
  • 280 g all-purpose flour
  • ,
  • 100 g marmalade (whatever kind you like best) or hazelnut praline

Instructions

    ,
  • Preheat oven to 180°C.
  • ,
  • Line two baking sheets with parchment paper.
  • ,
  • In a bowl with an electric mixer beat together the butter and the sugar.
  • ,
  • Beat properly until the mixture is fluffy, approximately for 2 minutes.
  • ,
  • Finally add the flour, beating until it is well incorporated.
  • ,
  • Divide the dough into two equally sized balls.
  • ,
  • Using a rolling pin, flatten the dough to a 0.5 cm thickness. Personally, I flatten the dough directly on the baking sheets I have lined with parchment paper.
  • ,
  • Cut circles into the dough with a glass.
  • ,
  • Using a cookie cutter a size smaller than the glass you used, cut openings in the middle of half of the cookies.
  • ,
  • Reroll scraps as necessary.
  • ,
  • Bake for 10-12 minutes or until golden brown.
  • ,
  • Allow them to completely cool down.
  • ,
  • Spread evenly half of a tablespoon of any marmalade or praline you have at hand on top of the cookies that you have not cut with the cookie cutters.
  • ,
  • Top each of these cookies with a cut-out cookie.
  • ,
  • Store cookies in a tin box.
