Instead of salad! This recipe is the most delicious way to make vegetarian fried balls! They taste good even when they get cold and they accompany perfectly every summer barbeque.

Ingredients

  • 200 gr. spinach
  • ,

  • 150 gr. oats
  • ,

  • 1 onion, finely chopped
  • ,

  • 1 spring onion, thinly sliced
  • ,

  • 1 tablespoon various fresh herbs chopped (oregano , rosemary , marjoram)
  • ,

  • 2 tablespoons olive oil
  • ,

  • 2 eggs
  • ,

  • 100 gr. crumbled feta cheese
  • ,

  • 100 gr. ladotiri from Mytilene (grated)
  • ,

  • Salt and pepper (according to taste, depending on how salty the feta cheese is)
  • ,

  • olive oil for frying

Directions

    ,

  • Let 2 tablespoons olive oil in a frying pan to burn.
  • ,

  • Add the spinach and then the onions.
  • ,

  • Let them saute until they lose all their fluids.
  • ,

  • Transfer the mixture to a large bowl and let it cool.
  • ,

  • Get the oats in a blender and turn them to flour.
  • ,

  • Once the mixture has cooled, add the eggs , oats , salt, pepper and the cheese.
  • ,

  • Mix well and mold small balls.
  • ,

  • Let the olive oil burn and fry the balls on both sides. I do not want them to burn and become brown because the vegetables will lose their liveliness.
  • ,

  • Remove the balls and array on a paper towel.
