Armenovil: Ice Cream Cake Recipe (no bake)

I tried this dessert for the first time during my last visit to Chalkidiki. I was excited by the velvety texture and it’s playful name: “Armenovil”! Coming back home I had the recipe hidden in my suitcase! So here we go:

Ingredients

    ,

  • 1 can whipped cream
  • ,

  • 1 can condensed milk
  • ,

  • 1 teaspoon vanilla extract
  • ,

  • 500 ml cream fresh
  • ,

  • 150 grams. chocolate couverture
  • ,

  • 15 meringues (you may find meringues ready in pastry stores or you can make them yourself )

For the almond croquet

    ,

  • 150 grams almonds
  • ,

  • 150 grams sugar

For homemade meringues:

    ,

  • 3 egg whites at room temperature
  • ,

  • 100 grams granulated sugar
  • ,

  • 100 grams castor sugar

Directions

    ,

  • Put the vegetable whipped cream in the mixer and beat for 5-6 minutes at full speed.
  • ,

  • Add the condensed milk and vanilla and continue beating for 3-4 minutes.
  • ,

  • Finally add the cream and stir gently with a spatula to mix.
  • ,

  • Add the grated chocolate, almond croquet and meringues broken into pieces.
  • ,

  • Keep some almond croquet for food styling.
  • ,

  • Stir the mixture well using a spatula.
  • ,

  • Use a round 22 cm form . Coat the form with a membrane.
  • ,

  • Pour in the mixture.
  • ,

  • Let it overnight in the freezer .
  • ,

  • Remove the cake from the form, flip the armenovil in a cake pan and garnish with the almond croquet left.

For the almond croquet

    ,

  • Put the sugar in a pan and let it melt over low heat.
  • ,

  • Add the almonds and stir thoroughly.
  • ,

  • Pour on parchment paper and let cool completely for 10 minutes.
  • ,

  • Work it in the blender. During summer I let it in the freezer for 30 minutes and then work it in the blender .

For the meringues

    ,

  • Beat the egg whites in the mixer to form soft peaks.
  • ,

  • Add granulated sugar and continue beating.
  • ,

  • Finally, stir in gently the caster sugar using a spatula. Spread on parchment paper sheets.
  • ,

  • Bake in preheated oven at 100°C for about 1 hour to 1 hour and 15 minutes. They must tear away from the parchment paper and be crispy in the outside.
  • ,

  • Let them cool thoroughly.
