Spinach Pesto And Cherry Tomato Tart Recipe

For spinach pesto
    ,
  • 2 cups spinach
  • ,
  • 2 garlic cloves
  • ,
  • 1/4 cup cashews
  • ,
  • 2 teaspoon lemon juice
  • ,
  • 1/2 teaspoon lemon zest
  • ,
  • 1/3 cup parmesan
  • ,
  • salt-pepper
  • ,
  • 1/3 cup olive oil
For filling
    ,
  • 200 g. cheese, grated
  • ,
  • 100 g. feta cheese, thick broken
  • ,
  • 100 g. gruyere, grated
  • ,
  • 100 g. ladotiri from Mytilene (grated)
  • ,
  • 150 g. strained yogurt
  • ,
  • 100 g. spinach pesto
  • ,
  • 10 cherry tomatoes
  • ,
  • 1 egg
  • ,
  • 1 tablespoon sweet paprika
  • ,
  • freshly grounded pepper

Instructions

For spinach pesto
    ,
  • In multi mix together spinach, garlic, cashews, lemon, lemon zest and parmesan. Mix until spinach melt.
  • ,
  • Add salt, pepper and oil and mix together until homogenous mixture.
For filling
    ,
  • In a bowl put all the ingredients but cherry tomatoes and mix well.
  • ,
  • After baking the tart put filling in it, put cherry tomatoes on top and sprinkle with olive oil.
  • ,
  • Bake in preheated oven to 180ºC for 30 minutes.
