Sautied Greens And Kopanisti Cheese Tart

Fresh Greek greens perfectly combined with my favorite cheese from the island of Tinos in a tart recipe.

Ingredients

    ,
  • 500 g. chard (the weight of all chards after cleaning)
  • ,
  • 500 g. greens (chicory, sowthistle, etc.)
  • ,
  • 500 g. kafkalithres
  • ,
  • 1 onion, finely chopped
  • ,
  • 2-3 spring onions
  • ,
  • ½ glass olive oil
  • ,
  • ½ glass homemade tomato sauce or biological tomato pulp
  • ,
  • salt
  • ,
  • 300 g. kopanisti cheese from Tinos
  • ,
  • 6 small rectangular cream cheese

Instructions

    ,
  • Pour olive oil in a wide saucepan and saute onions and spring onions over high heat.
  • ,
  • Add greens, coarsely chopped by hand. Cover the saucepan with a lid, lower heat and let  greens wilt for about 10 minutes.
  • ,
  • Add tomato sauce, salt and water (about half a cup), mix well with a fork and cover the saucepan. Let greens simmer over medium heat for about half an hour.
  • ,
  • Add cheese and stir.
  • ,
  • After baking the tart fill with the green mixture and put cream cheese pieces on top.
  • ,

  • Oil tart's surface and bake at 180°C for 40 minutes until you get a nice gold color.
