This pink couscous will give a smile to all your guests! I made it accidentally while I was trying to combine my leftovers in the fridge in one dish!
Ingredients
2 cups couscous ( 200 g . )
2 glasses of water ( 200 g . )
1 tablespoon butter
100g beetroot
100 gr . avocado
100 gr . baby spinach
For the vinaigrette
2 tablespoons juice from the boiled beetroot
2 tablespoons olive oil
juice of half a lemon
salt and pepper
Directions
Place the couscous in a bowl and add two cups of boiled water. Mix until it absorbs the water. Add the butter and stir. Pour the juice from the beetroot and mix until you get the pink color. Then add the beetroot and avocado. Finally add the spinach and drizzle with the vinaigrette ingredients .
Tip: You may add smoked ham and gruyere if you want to.
