For the dought

Ingredients

750 gr . flour, for all purposes
1/2 cup oil
2 tablespoons vinegar
1 ½ glass of lukewarm water
1 teaspoon salt

Directions

Put the sifted flour in a bowl or mixer.  Add the vinegar,  salt,  olive oil. Stir and add the water slowly until you have a dough that does not stick to the hands and has a smooth texture.  It should look like the skin of a baby. Cover it and let it rest for a while .

For the filling

Ingredients

400 gr. leeks , cut into thin slices
30 gr. olive oil
150 gr. round mushrooms , sliced
130 gr.  sour cream
40 gr. yogurt (2 tablespoons)
4. egg yolks
250 gr. gruyere
salt
Black pepper

Directions

Bake the tart dough for 10 minutes at 180 ° C.

Heat a skillet pan over medium heat and add olive oil.  Saute the leeks until they get soft and translucent. It will take about 15 minutes. Add the mushrooms, season with salt and cook until mushrooms are tender and most of liquid has evaporated. Remove from the pan, add the cheese and let the mixture cool.
Put the egg yolks, the cream and the yogurt in a bowl, add salt and pepper and whisk well.
Spread the mixture evenly in the base of the prebaked tart and pour the cream mixture . Bake in preheated oven at 180 ⁰ C for 40-45 minutes. If the dough starts to burn , cover the edges with foil.
