The traditional recipe from Crete, with no twist
Ingredients
For the dough
800g soft flour
2 eggs
1 cup sugar
1 cup oil
1 cup water
1 cup warm milk
2 pinches of baking soda
For the filling
1,100 g unsalted ricotta cheese
1 cup sugar
1/2 tsp. fresh cinnamon
1 egg
1 tsp. melted butter
2 vanilla beans
1 egg beaten
Direction
Put all the ingredients for the dought in one pan and mash them together until the dough unsticks from the pan . Allow the dough to rest for 30 minutes. Do the same for the filling. Divide the dough into 5-6 balls and roll each ball in a thick leaf. Cut round pieces using a mug. Put in the filling and give it the traditional shape using your fingers. Brush with the beaten egg and bake for 25-30 minutes.
