Ingredients
1 cup milk
2 large eggs
1 cup flour
2 tablespoons melted butter
1/2 tablespoon baking powder
250 gr. parmesan
250 gr. Gruyere ( Swiss Gruyère is ideal but I prefer Greek )
1 teaspoon salt
pepper
a few basil leaves ( chopped )
Preheat oven to 180 ° C.
Beat the eggs in a big bowl. Add milk, sifted flour, butter, and baking powder. Mix well. Continue adding the cheese, salt, pepper and basil.
Transfer the mixture into a muffin pan that is already buttered and covered with flour. Do not use paper baking cups because it will stick .
Bake at 180 ° C for 30-35 minutes until your muffins get this sweet golden brown color. Once baked, let them cool for 5 minutes and then remove from trays.
