Butternut Squash Soup with yogurt mousse Recipe

What you need on a super cold day!

Ingredients

1 ½ kg Butternut Squash
4 tbsp olive oil
100 ml cream
1 leek chopped
2 carrots
1 large potato
1 liter bouillon
1 pinch nutmeg
salt
freshly ground pepper

Directions

Peel the pumpkin peel, remove seeds and fibers and cut into small cubes. Peel potatoes and cut into small frames . Finely chop the leek and carrots . Heat the olive oil in a saucepan and add all the chopped vegetables . Saute for 3-4 , add the beef broth and nutmeg and let the ingredients boil for 30 minutes , until they get soft . Use a blenders to make a smooth cream, . Add salt and pepper and cook for another  minute. Add the cream fresh and stir.

For the yogurt mousse

Ingredients

1/2 cup of tea cream fresh
1/2 cup of tea yogurt
salt
freshly ground pepper

Directions

Whip the cream in a mixer, to make it thick . Add yogurt, salt, pepper and bring it to deep dishes. Garnish each plate with a full tablespoon of yogurt mousse and serve the soup hot.
