This is a recipe I actually dreamed of… I saw it in my sleep and a few hours later I cooked it. It consists of 3 parts, a biscuit base (cheesecake like), creme patisserie and baked apples! Simple as that! I brought it to work (you know… at MissBloom and Madame Figaro) and everybody got crazy over it! So I knew I had to share the recipe!
For the Biscuit Base
Ingredients
250g digestive biscuits
100g butter, melted
Directions
Make the base: Butter and line a 23cm loose-bottomed tin with baking parchment. Put 250g digestive biscuits in a plastic food bag and crush to crumbs using a rolling pin. Transfer the crumbs to a bowl, then pour over 100g melted butter. Mix thoroughly until the crumbs are completely coated. Tip them into the prepared tin and press firmly down into the base to create an even layer. Bake for a few minutes to give it a crispy taste.
For the Creme Patisserie
Ingredients
1 Ltr Milk (full fat)
200 grams of sugar
100 grams flour
100 grams corn flour
100 grams of butter
3 vanillas
Directions
Place 700 g of milk in a pot and add all the sugar, but not stir. Turn on the heat and warm the mixture until it boils . In a bowl , add the flour and corn flour. Add the remaining 300g of milk and stir well with a whisk . When milk reaches the boiling point remove from heat. Add the second mixture and mix well with a whisk. Then return to the heat.. I try to ” bake ” the cream so the flour is cooked and the flavor is disappeared. This might take up to ten minutes. It needs cooking at a very low heat and constant stirring.
Remove from heat, add butter and stir until is melted. Creme is ready for use.
For the apples
Ingredients
5 apples
Directions
Cut the apples in slices. Put them on a baking pan and bake for 30 minutes at 180°C,
