I am not sure you can call it a salad. My mom ceratinly does! This was a classic recipe in my house that I recently found out that not every mom cooks.. So I thought I should share!
Ingredients
250 gr greek yogurt
200 gr beetroot cut in small dices
100 gr walnuts
olive oil
salt & pepper according to taste
Cut the beetroot in small dices and mix with yogurt. Add walnuts and season with salt and pepper according to taste. Add a few drops of olive oil before serving.
You may leave it in the fridge (covered) for a few hours to make the flavor even stronger)
