Leek has always been one of my favorite ingredients in winter cooking! I always come up with new ideas and twist in traditional recipes. This is a new interpretation of a traditional pie from southern Greece! Eleni Psychouli, a true mentor to me, cooked the real version with spinach on her blog on MissBloom.gr, that you may find here.
Ingredients
1 sausage
250 gr. flour
2 tsp baking powder
4 eggs
1 yoghurt
1/5 cup olive oil
350 gr. leek
2 fresh green onions
1 small bunch chopped dill
1 small bunch of chopped parsley
400 gr. slice feta cheese
fresh grounded pepper pinch & salt
Directions
Cook leek for 20 minutes in a non stick pan. Make a cut along the sausage and bake it for a few minutes. Mix flour, baking powder, olive oil , eggs and yogurt in one big bowl. Add all remaining ingredients and keep feta the last one so it doesn’t “disappear” in the mix. Put the mixture in a long cake form, that is covered with oil and flour. Bake for 1 hour at 175°C.
Extra Tip: Instead of leek, you may use spinach or other herbs and spices such as fennel.

2 φρέσκα κρεμμυδάκια
1 μικρό ματσάκι άνηθο ψιλοκομμένο
1 μικρό ματσάκι μαϊντανό ψιλοκομμένο
400 γρ. φέτα χοντροσπασμένη
πιπέρι-λίγο αλάτι
