I love this one! It’s just so typical of this late summer season…
It owes its (every time) success to the amazing marriage of salty prosciutton and sweet figs! I only have one favor to ask: Please don’t split the skin of the figs… that is where all the flavor is!
Ingredients
5 figs
7 slices prosciutto
Your favorite mix of green salad
1 cup of your favorite green salad
1/2 cup crouton (you can make your own but I made my life easier buying them)
For the dressing
6 tablespoons extra virgin olive oil
3 tablespoons lemon juice
1 tablespoon honey
sea salt
freshly ground black pepper
NOTA BENE: Finish with Cream of Balsamic
Criss-cross the figs and cut them in 4 pieces. Mix with the salad, the crutton and add the prosciutto on top. Mix and shake well all the indredients of the dressing, add it to the salad and finish with the crème of balsamic vinegar.
