Perfect for my lunch box! I always try to find new ways to prepare a healthy meal for work! It takes good organizational and planning skills (sth I don’t really have…) not to order take outs when at work. This one is a classic favorite.
Ingredients
1/2 Chicken fillet
1/5 Eggplant
2 ts Basil pesto
Rocket
Salt + Pepper
Directions
Cut the fillet in thin slices, season with salt and pepper and grill until it gets a nice gold color! Follow the same with the eggplant!
Toast the bread. Add the pesto then the rocket, the chicken and the eggplant.
