This recipe is an absolute greek recipe that my mother cooks every summer and totally deserves to be an awarded recipe. It is so simple and yet so delicious thanks to it’s ingredients!

 



Ingredients

    ,
  • 500 g okra
  • ,
  • 2 ripe tomatoes
  • ,
  • 4 tablespoons extra virgin olive oil
  • ,
  • 2 eggs
  • ,
  • salt
  • ,
  • pepper

Instructions

    ,
  • Cut the tomatoes in small cubes
  • ,
  • Get the olive oil in high heat in the pan
  • ,
  • Pour the tomatoes and okra and stir
  • ,
  • Close the pan with a lid and let it get cooked in lower temperature for 15 minutes
  • ,
  • Remove the lid and create an empty space in the middle of the pan for the eggs.
  • ,
  • Break the eggs into a bowl and empty them to the space that you have have prepared
  • ,
  • Close the pan again with the lid and let the eggs cook for another 4 minutes
  • ,
  • Serve and optionally sprinkle with feta cheese
