This has always been a favorite on my family table!
For the sundried tomato pesto
200 gr. sundried tomatoes
100 gr. grated parmesan
80 gr. cone
1 clove of garlic
50 ml olive oil ( you may add more if you want to make it creamier )
Peel the garlic and remove the green part. Put all ingredients in a blender and beat until the mixture is homogeneous.
For the chicken
1 chicken fillet
1 tablespoon chopped herbs (Thyme, basil, rosemary)
1/2 cup oil
Cut the fillet into thin strips. Μix all the ingredients in a bowl and then marinate the chicken. It’s good to leave it in marinade for at least one hour. Then bake the chicken for 5 minutes on each side until it gets a nice gold color.
