Gimme a tart and I will figure out a new filling. I can think of 365 different tarts in one year! This one is one of my favorites!
300 gr. potatoes ( peeled and diced )
2 leeks (cut into thin slices )
2 zucchini (cut into thin slices )
2 red peppers ( cut into slices )
1 onion (cut into small frames )
1 clove of garlic
250 gr. gruyere
250 gr. slice
100 gr . yogurt
1/2 cup olive oil
freshly ground pepper
Boil potatoes in salted water. They should not melt but retain their shape. In a large skillet saute leeks, zucchini, onion and garlic. Pour in the pan boiled potatoes and peppers. Let the mixture cool down, add the cheese and stir. Whisk oil , eggs and yogurt and pour over the mixture.
Spread the dough in a tart pan. Cover with foil, pour over beans and bake for 10 minutes in a preheated oven at 180°C. Transfer the mixture into the tart pan and bake for 45 minutes at 160°C.
