1 kg strawberries
1 kg sugar
1/2 lemon , juice only
Wash thoroughly the strawberries. Remove the stalks and any white parts . Melt them with your hands and put them in a saucepan with a thick base. Sprinkle with sugar . Bring to a boil over medium to low heat . After a while you will see that there is foam. Remove it with a slotted spoon.
The jam is ready when you remove it with a wooden spoon and the drops roll slowly. Add the lemon juice and bring to a boil for another 2 minutes . Remove the pan from heat and transfer the jam into sterilized jars. The moment you do that the jam must me hot and the jars hot and sterilized. Fill each jar to the brim.
Close the lid tightly and turn it upside down. Let it cool and then refrigerate.
