Fresh Fig and Prosciutto salad

I love this one! It’s just so typical of this late summer season…

It owes its (every time) success to the amazing marriage of salty prosciutton and sweet figs! I only have one favor to ask: Please don’t split the skin of the figs… that is where all the flavor is!

Ingredients

5 figs

7 slices quality Parma ham or prosciutto buffalo mozzarella green or purple basil

For the dressing

6 tablespoons extra virgin olive oil

3 tablespoons lemon juice

1 tablespoon honey

sea salt

freshly ground black pepper
