  • Beat eggs and sugar in the mixer using a wire, until white and fluffy.

  • Add the oil and keep beating the mixture for 2 minutes.
  • ,

  • Stop beating the mixture, add grated carrots, flour, cinnamon, ginger, vanilla, baking powder, baking soda and salt.
  • ,

  • Mix gently with a spatula and finally add the walnuts.
  • ,

  • Grease and flour a rectangular pan, pour the mixture and bake it in already preheated oven at 180°C for 45-50 minutes.

  • Let it cool down, come to room temperature and remove from the pan.
  • ,

  • Mix the butter (at room temperature), the cream cheese and caster very well to create a homogenous mixture.
  • ,

  • With this mixture cover the whole surface of the cold cake.
