Ingredients for the cake

- 4 eggs
- 225 grams of granulated sugar
- 300 grams olive oil or sunflower oil
- 500 grams of grated carrot
- 300 grams sifted flour
- 2 teaspoons cinnamon
- 1 teaspoon ginger
- 1 teaspoon full of baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 vanilla
- 200 grams of chopped walnuts

Ingredients for the icing

- 250 grams of butter at room temperature
- 500 grams cream cheese
- 100g caster sugar

Directions

- Beat eggs and sugar in the mixer using a wire, until white and fluffy.
- Add the oil and keep beating the mixture for 2 minutes.
- Stop beating the mixture, add grated carrots, flour, cinnamon, ginger, vanilla, baking powder, baking soda and salt.
- Mix gently with a spatula and finally add the walnuts.
- Grease and flour a rectangular pan, pour the mixture and bake it in already preheated oven at 180°C for 45-50 minutes.
- Let it cool down, come to room temperature and remove from the pan.
- Mix the butter (at room temperature), the cream cheese and caster very well to create a homogenous mixture.
- With this mixture cover the whole surface of the cold cake.
