The classic puff pastry cream pie gets sexier with a layer of juicy strawberry filling! You may use fresh or frozen strawberries, or any other red berries.
Ingredients
For the pie-

- 1 sheet puff pastry ,
- 250-300 g berries fresh or frozen ,
- 1/4 tsp nutmeg ,
- 1 tsp vanilla extract ,
- 2 tablespoons sugar ,
- 70 g raisins ,
- 70 g of nuts (walnuts, almonds, peanuts) crashed ,
- A bit of granulated sugar for sprinklin

- 3 egg yolks ,
- 400 ml milk ,
- 1 large tablespoon flour ,
- 1 large tablespoon corn flower ,
- 75 g. sugar ,
- 1 tsp vanilla extract ,
- 2 tbs butter at the end

- Start by making the cream. Add half of the sugar in a saucepan with the milk leaving 2 tbsp of the milk out of the saucepan and simmer over medium heat. ,
- Mix 3 egg yolks with the remaining sugar the 2 tbsp milk into a bowl using a whisk. ,
- Add vanilla, flour and corn flower and mix. ,
- Continue beating until the mixture is homogenous. ,
- Bring milk to a boiling point, and add it slowly to the egg mixture using a ladle. Stir with care so that the eeg mixture does not turn to scrambled eggs. ,
- Transfer a small quantity of the hot milk to warm up the eggs and mix well. ,
- Return the entire mixture in the pot and stir constantly with a whisk until cream thickens over low heat. ,
- Remove from the heat as soon as cream thickens, add vanilla and butter and stir until butter is melt and incorporated the cream. ,
- Transfer the cream in a pan and let it cool down in the freezer (for 5-10 minutes), covered with a cling film so that it doesn't make a crust. ,
- Strain the berries and add nutmeg, a little sugar, raisins and nuts to them. ,
- Flour the pastry well on both sides and put on a baking sheet. ,
- Put the cream in the middle part and arrange the fruit on top of it. ,
- Cover the filling with the other two pieces of puff pastry ,
- Cover the pie with an egg yolk, sprinkle a little granulated sugar and bake in preheated oven at 200 degrees for 30-35 minutes. ,
- Serve in pieces with vanilla ice cream.
