Today the day is dedicated to Madwalk and that’s why I decided to devote the day’s recipe to the city’s beloved event of fashion and music! If Madwalk were a dessert that would be a Charlotte with strawberries and would wear black bow tie!

Thanks to Madwalk I decided to cook one of the most stylish desserts of Springtime, moreover one of the most historic ones since it was invented by the renowned chef Marie-Antoine Carême in favor of princess Charlotte, the daughter of George IV, named in honor of her. The black ribbon was an inspiration of the moment since it fits perfectly with my favorite accessory, bow ties.



Ingredients

    ,
  • 1 package lady fingers
  • ,
  • 300 g. ricotta or cream cheese, at room temperature
  • ,
  • 1½ sheet gelatin
  • ,
  • 300 g. yogurt
  • ,
  • 100 g. powdered sugar
  • ,
  • 400 g. strawberries
  • ,
  • 100 g whipped cream

Instructions

    ,
  • Use a spatula to mix the sugar with half of the cheese.
  • ,
  • Soften the gelatin in a little cold water, then melt it in a little hot water and incorporate it in the cheese-sugar mixture.
  • ,
  • Add the remaining cheese, stir and add the yogurt.
Assemply the Charlotte
    ,
  • Cover the bottom of a round pan with grease-proof paper.
  • ,
  • Arrange the lady fingers around the perimeter. If you can not get them to stand use some of the cream
  • ,
  • Fill in 1/3 of the cream, chop 100 g. strawberries and put them on top
  • ,
  • Repeat the same procedure twice
  • ,
  • Put the charlotte in the refrigerator to stand 
  • ,
  • Garnish with whipped cream and strawberries
Tip: In order to “stabilise” the lady fingers you can make a hazelnut praline ring on the tray! It also works as a sweet surprise for those who try it!
