Ingredients
For the dough-

- 400 g flour for all purposes ,
- 100 g wheat flour ,
- 9 g yeast powder ,
- 220 ml lukewarm milk ,
- 1 tablespoon olive oil ,
- 1 teaspoon salt ,
- 1 1/2 teaspoon sugar

- 1 potato (thoroughly washed, cut into small cubes) ,
- 1 egg ,
- 1 sausage cut into thin slices ,
- 150 g cream cheese ,
- 100 g feta cheese cut into small cubes ,
- 2 tablespoons chopped herbs (whatever you have: mint, basil and thyme) ,
- zest from half a lemon ,
- 1/2 teaspoon red sweet paprika ,
- olive oil for sautéing ,
- salt and pepper
Instructions
For the dough-

- Put all the ingredients in a bowl except from milk and oil and mix well. ,
- Make a puddle in the middle and add the oil and milk. ,
- Mix the liquid ingredients with the rest of the ingredients using a fork until you have a dough that does not stick to the sides of the bowl. ,
- Transfer to a floured counter top and knead until you have a soft and elastic dough. ,
- Place the dough in bowl, cover with a clean cotton towel and give it 30 minutes to inflate. ,
- Then shape the small pies

- Boil the potato cubes in salted water. ,
- Once ready, drain and set aside. ,
- In a nonstick skillet, saute the sausage slices for a minute. ,
- Add the potatoes in the pan and mix in with the sausages. ,
- Set the pan aside to come to room temperature. ,
- In a large bowl mix the cream cheese with the egg, the feta cheese, herbs, paprika and zest. ,
- Add the potatoes and sausage to the rest of the ingredients and mix well ,
- Arrange the filling on the pies and bake at 180’C for 30-40 minutes or until the dough gets a nice golden color.
