225 grams of granulated sugar
300 grams of olive oil or sunflower oil
500 grams of grated carrot
300 grams of flour sifted
1 teaspoon cinnamon
1 teaspoon full of baking powder
½ teaspoon of baking soda
½ teaspoon of salt
150 grams chopped walnuts
For the icing
125 grams butter at room temperature
250 grams of cream cheese
50 grams of sugar
Beat eggs with sugar until they get fluffy and white.
Add oil and keep beating beating for 2 minutes.
Add the grated carrot, flour, cinnamon, baking powder, baking soda and salt .
Stir gently and finally add the walnuts.
Grease and flour a pan for cupcakes and pour the mixture. This will make about 15 .
Bake in preheated oven at 180°C for 25-30 minutes .
Allow to cool and remove from the pan.
Mix butter, cream cheese and sugar very well and then add some vanilla seeds, When the cupcakes are cool cut them in half and fill with the icing. Then spread the surface and decorate with pralines.
