Spinach Pizza

Traditional spinach pie was crossed with homemade pizza and the result is spanakopitsa.

For the pizza
  • 1 kg. hard wheat flour (for bread)
  • 7 g. sugar
  • 20 g. salt
  • 8 g. dry yeast
  • 80 ml olive olil
  • 600 ml lukewarm water
  • tomato sauce and grounded mozzarella
For the spinach filling
  • 1 kg. spinach
  • 3 leeks
  • 1 onion
  • 5 small fresh scallions
  • fresh herbs (dill, mint, basil)
  • 2 eggs
  • 350 g. feta cheese (coarsely ground)
  • 200 g. ladotiri from Mytilene (grated)
  • olive olil
  • salt / freshly-ground pepper
  • 1 leek filling sausage


For the pizza
  • After dissolve seperately the yeast in a few tablespoons of lukewarm water knead well all the ingredients in a mixer or by hand. Make the dough a small ball, cover it and let it expand for half an hour.
  • Divide dough into balls, cover and leave them expand another half hour. Pizza needs baking in very hot oven for some minutes. To enhance the temperature, let the pan be warm enough before putting the pizza in.
  • Μόλις ανοίξουμε την πίτσα βάζουμε πάνω τη σάλτσα ντομάτας και το τυρί και ψήνουμε για 10 λεπτά.
  • Open pizza, place over tomato sauce and cheese and bake for 10 minutes.
For the spinach filling
  • Wash greens well. Drain in colander.
  • Finely chop leeks, onion and scallions.
  • In a large saucepan pour olive oil and saute leeks, onion and scallions. Once they get ready add spinach and let it draw its fluids.
  • Add salt, pepper and herbs.
  • Χτυπάμε τα αβγά και τα προσθέτουμε. Ανακατεύουμε καλά. Στο τέλος ρίχνουμε τα τυριά και ανακατεύουμε. Δεν θέλουμε να εξαφανιστεί η φέτα.
  • Beat eggs and add them in the mixture. Mix well. At the end add cheese and mix well. We do not want the cheese to melt totally.
  • Spread spinach filling on the pizza we have half baked. Add slices of sausage and put pizza in the oven for another 5 minutes.
