Potato and Sausage Pie

These November weeks ask for comfort food and blanket on the couch! I have the perfect recipe for family relaxation and home warmth.


For the dough
  • 400 g flour for all purposes
  • 100 g wheat flour
  • 9 g yeast powder
  • 220 ml lukewarm milk
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 1/2 teaspoon sugar
For the filling
  • 1 potato (thoroughly washed, cut into small cubes)
  • 1 egg
  • 1 sausage cut into thin slices
  • 150 g cream cheese
  • 100 g feta cheese cut into small cubes
  • 2 tablespoons chopped herbs (whatever you have: mint, basil and thyme)
  • zest from half a lemon
  • 1/2 teaspoon red sweet paprika
  • olive oil for sautéing
  • salt and pepper


For the dough
  • Put all the ingredients in a bowl except from milk and oil and mix well.
  • Make a puddle in the middle and add the oil and milk.
  • Mix the liquid ingredients with the rest of the ingredients using a fork until you have a dough that does not stick to the sides of the bowl.
  • Transfer to a floured counter top and knead until you have a soft and elastic dough.
  • Place the dough in bowl, cover with a clean cotton towel and give it 30 minutes to inflate.
  • Then shape the small pies
For the filling
  • Boil the potato cubes in salted water.
  • Once ready, drain and set aside.
  • In a nonstick skillet, saute the sausage slices for a minute.
  • Add the potatoes in the pan and mix in with the sausages.
  • Set the pan aside to come to room temperature.
  • In a large bowl mix the cream cheese with the egg, the feta cheese, herbs, paprika and zest.
  • Add the potatoes and sausage to the rest of the ingredients and mix well
  • Arrange the filling on the pies and bake at 180’C for 30-40 minutes or until the dough gets a nice golden color.
