Video: Mexican Fajitas VS Flatbread wraps

Mexican tortillas and flat breads wraps. From very young I was thinking that we are talking about two very similar things that are made very differently and utilized in the kitchen with different delicious result. So I decided to do a crash test making fajitas in two ways: the western and oriental.

The motive was Mexicana Barbara Stathis rice which is a necessary ingredient in every “Fajitas Party”. On the other side, we have the Barba Stathis brown rice with raisins, chickpeas and peas, whose taste is sweet and salty at the same time.

All the Barba Stathis rice (in total there are 5 flavors, see with a click here) come from the rice fields of Macedonia and even Barbara Stathis not only controls the quality of the rice that arrives at our plate but also checks the whole production process to be done with respect for the environment and according to the sustainability and green growth model.

By doing this crash test, I replaced the raw materials they use in the West with those they love in the East. Instead of sour cream I put yogurt and instead of guacamole I put hummus.

In both cases I played with chicken. In the Mexican version, however, I put cumin and smoked paprika, while in Oriental I gave it a curry flavor.

Mexican Tortillas

For the chicken
  • 1/4 cup olive oil
  • 250 gr fillet chicken legs
  • 1 lime
  • 1 teaspoon. cumin
  • 1 tablespoon paprika
  • 1 clove garlic
  • 1/2 onion
  • salt and pepper kayen
For the rice For the vegetables
  • 1 onion
  • 3 peppers (red, green, orange)
  • 1 lime
For the guacamole
  • 1 ripe avocado
  • 1 lime
  • 1 tablespoon coriander
  • 1 clove garlic
  • salt
  • cayen pepper
For serving
  • 200 gr sour cream
  • 4 mexican tortillas

For flatbread

For the chicken
  • 250 gr fillet chicken leg
  • 1 tablespoon. curry
  • 1 onion
  • 1 clove garlic
  • 2 spring onions
For the rice Fot small salad
  • 5 cherry tomatoes
  • 1/2 cucumber
  • a small bunch mint
For serving
  • 200 gr hummus
  • 200 gr yoghurt
  • 4 flat breads


For the Mexican Tortillas

For the chicken
  • For Mexican fajitas with chicken, first cut the chicken into small pieces. Add all the marinade materials. Stir the ingredients and leave them in the fridge for at least 30 '. The more we marinade the more tasty it will be. If you hurry, you can cook it directly, but you will not get all the flavors. Bake it in a non-stick pan for 4'-5 'on each side.
For the rice
  • Put 2 tablespoons of olive oil in a non-stick pan. Add the Barba Stathis Mexicana rice and one cup water. Simmer until the liquids evaporate.
For the vegetables
  • Heat the olive oil and saute all the vegetables to soften. Add the lime.
For the guacamole
  • Clean the avocado and mush it with fork. Add all the remaining ingredients, mix and refrigerate. The avocado tends to tan. It does not mean it spoiled, it simply changes color if you prepare it several hours before serving it.

For the chicken
  • Cut the chicken into small pieces, the onion into small cubes, the onions into small slices and mash garlic. In a non-stick pan, saute onions and garlic until they get a nice brown color, and then add chicken and curry. Cook until the chicken gets a nice golden color from all sides.
For the rice For the salad
  • Chop the cherry tomatoes, cucumber and mint and put them all together in a bowl.
