BEETROOT PIE

Ingredients

For the pie:
  • 6 Crust leaves
For the filling:
  • 4 beet roots
  • 1/2 dried onion, cut into cubes
  • 1 leek, cut into rings
  • 1 garlic clove, optional
  • 2 spring onions, sliced
  • 20 walnuts, coarse
  • 1 tablespoon fresh herbs, oregano, mint, basil or other
  • 250 gr feta cheese
  • 250 gr unsalted cheese or cream cheese
  • a little olive oil
  • a little vinegar
  • Salt  and pepper

Instructions

  • Wash and peel the beetroots.
  • Put them on foil, pour them with some olive oil, add salt and close them tightly.
  • Bake them in a well preheated oven at 180 ° C for 30 minutes.
  • Remove and cut into small cubes.
  • In a large frying pan, sauté onion with spring onions and leek (and garlic optional).
  • Add the beets, herbs, sausage and mix.
  • Crumble the cheeses and add them to the pan.
  • Remove from the heat.
  • Grease well the baking pan.
  • Put the first sheet and grease well with a brush.
  • Add the second one and grease it.
  • Put 1/4 of the filling and continue with the next sheet. Grease well and repeat the same procedure for another 3 times.
  • Finally, cover with two more very well greased sheets.
  • Optionally sprinkle a tablespoon of sesame seeds on the surface.
  • Bake in a well preheated oven at 180 ° C for 40 minutes.
